What's that Subway smell?

Can anyone help me with something that has been bugging me for a while – do Subway sandwich shops actually have ventilation shafts that blow that bread smell out on to the street? You can smell the one on the Aldwych from 30-60 feet away – surely that can’t be the smell emitting from the opening and closing of the door?

I’m pretty sure I read in either “Culture Jam” or “No Logo” a few years ago that this was a tactic of Subways to draw the passing public in. Freshly baked bread and coffee being two of the smells known to make many westerners feel all warm and cosy inside.

While I would find it very easy to believe the smell was being deliberately pumped out front, it’s also quite likely that the extraction fan for the bread ovens has no option but to be vented out the front. I can’t see many of those little subway places having much of a back exit when they’re stuck on the front of huge buildings.
